Aurora Crystal is made of pure Chardonnay grapes. The annual production reaches 1250 and is predicted to reach 2000 in the coming year.
Winemaking and Cellar Practices:
Grape harvest is made by hand, typically the last week of August. Our goal is to pick at maturity level that would provide an optimal sugar level and preserve the natural acidity and fresh aromas of this grape. The grapes are then squeeze crushed, gently pressed and cold fermented at 18° C in temperature controlled stainless steel tanks and bottled approximately 4 months from the date of harvest.
