VITICULTURE & VINIFICATION
“The Seven Bottle” is an extraordinary cuvée of seven white grape varieties, each of which contributes its own personality – together they create a wine that is more than the sum of its parts.
The grapes come from organically farmed vineyards in the Batroun District, situated at altitudes of 450 to 1,500 meters. This wide range of locations allows each grape variety to ripen at its optimal pace, resulting in aromatic depth, complexity, and a vibrant, natural acidity. Harvesting is done exclusively by hand.
Five of the seven grape varieties are fermented together in stainless steel tanks, while Riesling and Chardonnay are vinified separately to preserve their individual character. After gentle pressing and cold clarification, temperature-controlled fermentation takes place at 16–20 °C. Once fermentation is complete, the individual batches are blended and then aged on the fine lees, which gives the wine additional texture and depth.
