Vineyard:
This wine is a pure Sauvignon Blanc, and its production reaches 1250 bottles per year. The number of grapes per vine is tightly controlled to keep only 10-12 grapes per vine.
Winemaking and Cellar Practices:
These grapes have been handpicked, typically the last week of August or early September. The goal is to pick at a maturity level that would provide an optimal sugar level and preserve the natural acidity and fresh fruity aromas of the grapes. Grapes are squeeze-crushed, gently pressed, and cold-fermented at 180 C in temperature controlled stainless steel tanks. The wine is fined, filtered, and bottled approximately 4 months after harvest.
